Hello and welcome to another day of Summer of Fun! Yesterday was a mess, but it all worked out especially when we figured out how to make Kahoot work! Did you try Kahoot? I’m sure you had a terrific time playing trivia with your fam!!
For day 4, we’re jumping into the kitchen and baking together. I don’t know what it is about spending time in the kitchen with my kids, but it’s one of my all-time favorite things to do. Maybe it’s the way they interact with each other. Maybe it’s all the shenanigans going on. They are always giving each other snarky (in fun of course) comments and teasing each other. Whatever it is, it makes me smile and laugh every.single.time!!
Interestingly enough, they love helping in the kitchen, which I’m grateful for. One day they’re going to leave the nest and are going to need to know how to take care of themselves. So, cooking and baking skills are NOT a bad thing. Right? Right!
The best way for us to do this today is for me to just jump right in. There’s not really a lot of stories to go with today’s activity, just lots of goodies!! Let’s jump to it then…
Recipe 1 – No Bake Cookies
While most No Bakes are typically the same, there are several different variations using slightly different ingredients. The recipe we use turns out fabulous and the boys love them. I found our recipe on Pinterest and you can see it there or on Dear Crissy.com where the original recipe came from.
These are very simple to make and the boys love them. They rarely last more than a couple of days.
Recipe 2 – One – One – One Peanut Butter Cookies (aka – 3 ingredient peanut butter cookies)
I have a gluten intolerance so I’ve been making these cookies for many years. I’ve noticed they’ve started popping up on Pinterest A LOT lately. Talk about easy peasy lemon squeezy! It doesn’t get any easier than these little beauties! We make them when our sweet tooth is insatiable because they are quick and take THREE ingredients. For the sake of today’s post, I did pull the recipe from Pinterest so you can find it!! Kudos to the recipe’s owner, Plattertalk.com
These are a nice option if you have gluten issues or if you’re looking for something quick and easy to get you through a sweet craving!
Recipe 3 – Cheesecake Keto Bombs
These are new to us! I was looking for something sweet, cold and low carb. These bombs fit the bill. We got so wrapped up in the process I forgot to snap off some photos. I think that was probably because it was a new recipe and I didn’t want to mess it up. Nothing like trying a new recipe just to screw it up and have it bomb (ha, see what I did there? 🙂 )
Now, don’t laugh, the recipe says to fill silicon trays with your mixture and I didn’t have any silicon trays so I improvised. YEP, I used a styrofoam egg carton and unfortunately that’s the only photo I have of these delicious little goodies. Make no mistake about it, they are DA BOMB!! My youngest decided to have his drizzled with chocolate syrup and he said they rocked! We also talked about dipping them in melted chocolate after they’d been frozen and then refreezing them again to harden the chocolate. That may just be a thing!! 🙂
